Banana Bread

As I have mentioned before, leg cramps are one of the issues I have been dealing with during this pregnancy.  In an attempt to sneak some extra potassium into my diet I baked banana bread this weekend and it turned out so yummy I wanted to share the recipe.  I think the original credit goes to Martha Stewart, but I found it on www.allrecipes.com.

Ingredients:

*1/2 cup melted butter
*1 cup white sugar
*2 eggs
*1 tsp vanilla extract
*1 1/2 cups AP flour
*1 tsp baking soda
*1/2 tsp salt
*1/2 cup sour cream
*1/2 cup chopped walnuts
*3 medium bananas, mashed

 Directions:

*Preheat oven to 350.  Grease loaf pan.
*Stir together melted butter and sugar.  Add eggs and vanilla, mix well.  Combine flour, baking soda and salt.  Stir into butter mixture until smooth.
*Fold in sour cream, walnuts, and bananas.
*Bake for 60 minutes.
Tasty finished product

  2. You are looking so fabulous. Laura was so right, that is one sweet baby bump for sure.
    Hope the Banana Bread helps with the leg cramps. I thought of you today when I bought bananas.
